Gluten Free Pumpkin Cranberry Streusel Coffee Cake ~  Using Trader Joe's Mix

Preheat Oven 350*

1 Box Trader Joe's ~ Baker Josef's Gluten Free Pumpkin Bread & Muffin Baking Mix

In a mixing bowl stir together:
1 Cup Water
½ Cup Oil
2 Eggs
Bread Mix
Do not over beat
Add:
¾ Cup Fresh Cranberries ~ Whole or Chopped

Pour into a Lightly Greased 8X8 Baking Pan

Top with Streusel Topping:
In a small bowl use a fork to mix together
½ Cup Gluten Free Flour
½ Cup Brown Sugar
½ Cup Chopped Pecans and Walnuts
2 tsp Cinnamon
¼ Cup Melted Butter
Sprinkle/Crumble over the cake

Bake 55 minutes or until done
I used a digital thermometer inserted into the center 
when it reaches an internal temperature of 205-210* the cake is done

Cool on a wire rack.
