Hemp Seed Crusted Baked Chicken Tenders ~ Gluten Free and Low Carb


 I love Hemp Hearts. I used these yummy little Hemp Seed Hearts to make a Chicken Breading for Chicken Tenders.
These are super easy to make, They are Gluten Free and Low Carb.


Hemp Seed Crusted Baked Chicken Tenders

In a large bowl mix with a fork:
½ Cup Hemp Hearts  (I used Manitoba Harvest) 
½ Cup Almond Meal  (I used Trader Joe's)
Seasoning to taste, I used:
Garlic and Onion Powder
Smoked Paprika
Cayenne Pepper
Salt and Pepper

2# Chicken Tenders

In a medium bowl whisk 2 eggs

Line a cookie sheet with Parchment Paper

Dip the Chicken Tenders in the Eggs
Coat in the Hemp Seed Breading Mix.
Place on the prepared Cookie Sheet

Spray the Chicken Tenders with Cooking Spray

Bake 400*
for 10 minutes
Turn and cook until done
Mine took 20 minutes
Keep and eye on them so they don't dry out

I served the Tenders with
Roasted Acorn Squash stuffed with Cranberries

Low Carb Almond Sunflower Chicken Tenders


This delicious Low Carb Chicken will become a family favorite.

Low Carb Almond Sunflower Chicken Tenders

5 Boneless Skinless Breast of Chicken
Place in a Ziplock bag, Use a meat mallet to pound out evenly but not super thin
Cut into desired size Tenders

In a bowl combine
1 Cup Almond Meal (I used Bob's Red Mill)
1 Cup Parmesan Cheese
½ Cup Unsalted Sunflower Seeds chopped in a mini chopper
Spices to Taste ~ I used
Garlic Powder
Onion Powder
Ground Black Pepper
Trader Joe's 21 Seasoning Spice Salute

In a bowl whisk with a fork
2 Eggs

Lightly coat a Cookie Sheet with Extra Virgin Olive Oil

Dip the Chicken Tenders into the Egg
Place into the Almond Mixture ~  Turn and coat both sides
Place on the Cookie Sheet
Continue coating all the Chicken
Spray the Chicken with a Little bit of Olive Oil Spray

Place in a preheated 425* oven
Bake for 20 minutes or until done. Do not over cook otherwise they will be dry.
Internal temperature 165*

Remove from the oven.
Turn on the Broiler
Place under the broil for 2-3 minutes (keep an eye on them)
Broil until Golden Brown and Crispy

Ultimate Chicken Fingers ~ Gluten Free

Ultimate Chicken Fingers ~ Gluten Free:

Preheat oven to 450*
Spray a cookie sheet with Cooking Spray (Original Recipe said to line the cookie sheet with Tin Foil
I skipped using the foil as I felt it would be a waste)

In a shallow bowl combine: (This is a single recipe, I doubled it in the Video)
¾ Cup Bisquick Gluten Free Mix
½ Cup Grated Parmesan Cheese
1 tsp. Paprika
To Taste:
Salt
Pepper
Garlic Powder

In another shallow bowl whisk with a fork:
2 Eggs

Either buy 1 Pound of Chicken Tenders or cut 3 Chicken Breast cut into stripes

Dip the Chicken into the Eggs.
Then coat with the Bisquick Mixture
Place on the Cooking Sheet
Continue until all the Chicken has been Coated.

Drizzle the Chicken with
3 Tbl. Melted Butter

Bake for 8 Minute
Turn the Chicken over and cook until done. Mine took about 15 minutes. Keep an eye on them so that you don't over cook the Chicken.

I served my Chicken with:

Garlic Spinach
1 -16ox package of Frozen Spinach.. Cook in the Microwave for 4 Minutes
In a Saute Pan .. add Extra Virgin Olive Olive
Garlic and Red Hot Pepper Flakes to taste
Cook for about 2 minutes. Add the Spinach and cook for a couple of minutes.
Add 1 ½ Tbl. Butter,, mix until melted

Rice Pasta:
I used Thia Kitchen Rice Noodles
Cook in boiling water until done.
Rise in cold water..drain
Melt some Butter,, add Garlic Powder and Parsley Flakes
Mix the Pasta in with the Butter.

Easy Gluten Free Cajun Chicken

Easy Gluten Free Cajun Chicken

You can buy Chicken cutlets, Tenders or take chicken breast  cut them
into the stripes.

Mix in a bowl number one:
1 cup Bob's Red Mill Gluten Free Cornmeal (If your not GF use regular Cornmeal)
2 tsp. Chili Powder
1 tsp. Cayenne Pepper
1 tsp. Oregano
salt and pepper

Bowl number two:
2 eggs beaten
( depending on how much chicken you use, adjust
the egg and cornmeal mixture so you have enough to
coat all the chicken pieces)

Take the chicken and coat with the cornmeal mixture
then dip in the eggs
coat again in the cornmeal mixture

Large Skillet: heat ¼ cup of Vegetable oil
( you may need more depending on how much chicken you use)
Over medium heat,
cook the chicken.. do not over crowd the pan..
brown on one side and turn.. brown second side.
I like to use thicker pieces of chicken, so after I brown them
( about 5-6 minutes) I transfer them to a cookie sheet and
bake in a  475* oven until done.. do not over cook or they
will be dry-- watch them- If you use thinner pieces you can skip the oven part.

This is an easy quick dinner to make. My family enjoys it. I like to serve the Cajun Chicken with Angel Hair Gluten Free Rice Pasta w/Garlic Butter and Parmesan Cheese, Salsa, Sour Cream, Avocado and Fresh Tomatoes with Fresh Mozzarella, Basil, Parsley, Balsamic Vinegar and Extra Virgin Olive Oil.
