Banana Nut Almond Meal Muffins ~ Gluten Free:
In a medium bowl Mash with a Fork then use a Potato Masher
3 Very Ripe Bananas
In a large bowl mix:
3 Cups Trader Joes Just Almond Meal
½ tsp. Xanthan Gum
½ tsp. Salt
1 tsp. Baking Soda
½ tsp. Baking Powder
1 tsp. Cinnamon
Add the Mashed Bananas to the Dry Ingredients
Then add:
3 Beaten Eggs with a fork
Add:
¼ Cup Melted Coconut Oil
½ Cup Honey
1 tsp. Vanilla Extract
Mix just until combined
Add:
½ Cup Chopped Walnuts or Raisins (or a little of each)
Preheat oven to 350*
Spray a 12 cup Muffin tin with Cooking Spray
Using a Ice Cream Scoop evenly measure out the Muffins into the Tins
I had a just a little bit of batter left over.
I sprayed a Rectangle Ramekin dish with cookie spray and filled with the left over batter or you can use another muffin tin for the remaining batter. (May get 2 more muffins)
Sprinkle the Muffins with a mixture of Cinnamon and Sugar
It took appropriately 20-22 minutes to bake the muffins
I like to use a digital thermometer inserted into the center to check that they are done. When the muffins reach and internal temperature of 205* they are done.
Remove from the pan and cool on a wire rack.
These muffins are very moist.
I froze the left overs in a container. They stayed very fresh in the freezer. I microwave them froze for 15-20 seconds or until defrosted.

I used a digital thermometer to check the bread for when its done. Bake until 205*-210* in the center of the bread.
Its also great to check the temperature of the milk and water before adding the yeast. Its a helpful gadget.
