Gluten Free Oatmeal Applesauce Muffins:
In large bowl mix together all the dry ingredients
1 1/2 cups Bob's Red Mill Gluten Free Extra Thick Rolled Oats
(You can also use Bob's Red Mill Gluten Free Quick Cooking Oats)
1 1/4 cups Bob's Red Mill Gluten Free All Purpose Flour
1/2 cup firmly packed Brown Sugar
1 tsp. Cinnamon
1 tsp. Baking Powder
3/4 tsp. Baking Soda
1 tsp. Xanthan Gum
Add:
1 cup Unsweetened Applesauce
1/2 cup Milk
3 TBL. Vegetable Oil
1 Egg
Mix until all the dry ingredients have been mix together but do not over beat
Add: (Optional) Fold in
½ Cup Raisins
Spray a 12 cup muffin tin with Cooking spray or use muffin cups.
Use an ice cream scoop to help fill the muffin tin.
Topping: Mix in a small bowl:
2 TBL. Melted Butter
1/2 cup Bobs Red Mill Gluten Free Thick rolled Oats (Or quick cooking Oats)
2 TBL. firmly packed Brown Sugar
1/2 tsp. Cinnamon
Sprinkle a little bit of the topping on top of each muffin/batter
Bake 400*
Approx: 25-30 minutes or until toothpick inserted in the middle comes out clean and golden brown
Remove from muffin from tins ~ cool on wire wrack
Best served warm
After the muffins cooled off I froze the left overs in the Freezer in a container. They only take about 20 seconds to defrost on the Microwave.
