Dutch Apple Cake ~ Gluten Free

Gluten Free Dutch Apple Cake:

Cream in a KitchenAid Mixer:
¼ cup Shortening
½ cup sugar  ~ Scraping bowl with spatula
Add:
1 Egg.. Mix thoroughly

Mix together in a small bowl: I use a wire whisk to blend it well.
¾ cups Bob's Red Mill Gluten Free All Purpose Baking Flour
1 tsp. Baking Powder
¼ tsp. Salt
1 tsp. Xanthan Gum

Add the flour mixture with:
¼ cup Milk
¾ tsp. Vanilla
to the Shortening mixture

Beat on high for 2 minutes ~ Scraping Bowl as needed
Grease an 8" pan.
Pour the Batter into the pan.
The Batter will be thick,, use a wet Spatula to help spread out the batter.

Peel, Core and Slice one-two apples thin
Top the batter with the apple slices (Use just enough apples to make a single layer)
In a small bowl mix to your taste:
Cinnamon, Sugar, and Nutmeg.

Sprinkle the  Cinnamon, Sugar and Nutmeg over the apples
Dot with 1 Tbl. Butter.
Bake 350*
30-40 minutes (do not over bake.. will dry out)
Use a cake Tester, make sure it comes out clean.

You can eat this cake as is or add a scoop of vanilla icecream.

After it was cooled,,I sliced it and wrapped individual pieces in plastic wrap and placed in a container in the freezer. They froze well!
