Easy No Bake Gluten Free Granola Bars

Easy No Bake Gluten Free Granola Bars:

These Granola Bars need to stay refrigerated:
1/2 cup Peanut Butter
1/3 cup Honey
1/4 cup Coconut Oil
1- 2/3 cups Bob's Red Mill Gluten Free Extra Thick Rolled Oats
***(Use Regular Oats if your not Gluten Free)***

1 -- 1/1/2 cup of any combination of: Pumpkin Seeds, Sesame Seeds, Sunflower Seeds, Coconut Flakes, Any Dried Fruits. You can add Chocolate Chips or Peanut Butter Chips. I decided not to add any Chips because it has been very hot this week. But you can add them if you wish.

In a saucepan on medium heat, melt together the Peanut Butter, Honey and Coconut Oil. Stirring to make sure it doesn't stick to the bottom.

Place the Oats and Seeds/fruits/nuts in a large bowl. Pour the Hot liquid over the Oats. Mix well.
Spread into a Parchment lined  8×8 pan. Spray the paper with Cooking Spray.
Use a wooden or Rubber Spatula and spread out the Granola evenly.
Cover with Plastic Wrap and refrigerate for 2-3 Hours or until hard.
Lift out of the pan using the parchment paper and remove the paper from the Granola Bars.

Cut into desired size.
Wrap individuality in Plastic Wrap and store in a Zip-Lock bag in the Freezer.

I defrosted 1 granola bar on the counter overnight,, it was so hot here,  the Granola bar was rather mushy.

The second bar I defrosted over night in the Refrigerator for Breakfast and it was wonderful.

I let it stand at room temperature for about 10 minute before I ate it. They are best eaten cold.

These Granola Bars are very filling and have a wonderful flavor.

I have made them Twice,, the second time I added ¼ cup of Flax seeds for extra fiber.
