Gluten Free Pizza - Bob's Red Mill Pizza Mix

Homemade Gluten Free Pizza ~ Bob's Red Mill Pizza Crust mix:


1 Pkg. (16 oz) Bob's Red Mill Gluten Free Pizza Crust ~ Whole Grain Mix
1 ½ cups Warm Water 110*
2 Eggs (*Eggless options at the end of recipe*)
2 TBSP Olive Oil
Yeast Packet (Enclosed)

Pre-heat oven to 425*. Preheat a Pizza Stone for 30 minutes
Using a KitchenAid Mixer:
In the large bowl of the mixer combine water and yeast. Stir/whisk to dissolve. Let sit for 5 minutes.
Mix 2 eggs and the Olive oil ~ Add to the water  ~ Yeast mixture.
Blend briefly with the paddle of the KitchenAid Mixer.
Add the Gluten Free Pizza Crust Mix again using the paddle and blend about a minute. Scrape the bowl. Leaving dough in the bowl, split the dough in half. Using warm water on your hands will make it easier to manage the dough. Cover with Plastic wrap and a towel. Rise for 20 minutes.
Grease 2 Pizza pans. My pans are 12". Using wet hands, spread out the dough to cover the full pizza pans,, making an edge/crust.
Bake on the pizza pans without toppings for 7-9 Minutes.
Remove from oven, cover with your favorite sauce and toppings.
Bake 15-18 minutes or until done.


Pizza Stone Method:




(I only have one pizza stone. I make the first pizza,, take the second crust and remove it from the pizza pan and cool on a wire rack, this will keep it from getting soggy)
I like to use a pizza stone,, I do not have a pizza paddle. I gently slid the pizza crust onto an upside down cookie sheet that has been dusted with Cornmeal then carefully slid it onto the pizza stone. Be careful not to burn yourself. When the Pizza is done..take a spatula and carefully lift up the edge of the Pizza and slid back onto the upside down cookie sheet. (I did not do this in the video,, but next time I will sprinkle some corn meal on the cookie sheet to make it easier to slid the crust onto the pizza stone.) Continue with the second crust. To avoid getting a soggy crust..after I sliced the Pizza,, I cool them on wire wracks. This pizza also freezes very nicely. First make sure it is completely cooled and put into freezer bags. Its best to heat them up on the pizza stone. If you dont have a pizza stone a cookie sheet will work fine too.

Eggless option
Combine 2 TBSP of Flaxseed Meal with 6TBSP water:Let stand one minute. Add to the recipe as you would the eggs.
