Gluten Free Coconut Granola Cereal ~ Extra Thick Rolled Oats
Mix in a Large Bowl:
3 cups Bob's Red Mill Gluten Free Extra Thick Rolled Oats
(Use Regular rolled Oats if your not Gluten Free)
1/3 Cup Bob's Red Mill Ground Flax seeds Meal
½ Cup Sliced Almonds
1 cup Chopped Walnuts
½ Cup Unsalted Roasted Pumpkin Seeds
¼ Cup Sesame Seeds
1 cup Shredded Sweet Coconut
1/4 cup Brown Sugar packed (If you like it sweeter add more sugar)
1/2 teaspoon salt
1-2 Tsp. Cinnamon
(Use any nuts and seeds of your choice)
Melt in a sauce pan
1/4 cup plus 2 tablespoons Coconut Oil
1/4 cup Honey
Pour the Oil and Honey over the Oat Mixture and mix thoroughly
After the Granola has baked you will add 1-2 cups of Dried Fruit of your choice.
I use Cherry's, Orange Flavored Cranberries and Raisins
Directions:
Preheat oven to 250*
Pour the mixture onto 2 cookie sheets lined with Silpac Baking Mats.
Or use Parchment paper
Bake for about 1 hour
Stirring/Turning every 15 minutes to get nice and golden brown and not burnt on the edges
Remove from oven and let cool for about 10 minutes. Transfer into a large bowl. Add raisins and dried fruits of your choice. Mix thoroughly.
Cool completely then store in a container or Ziplock bags.
Homemade Granola has about a 2 week shelf life.
I Freeze most of my Granola and keep about 2-3 days out.
