Chewy Peanut Butter Granola Bars ~ Gluten Free
1 2/3 cup Bob's Red Mill Gluten Free Quick cooking Oats
***(If your not Gluten Free you can use Regular Oats)***
1/2 cup Brown Sugar
1/3 cup Bob's Red Mill Whole Ground Flax Seed Meal
1 tsp. Cinnamon
2 cups ~ Combination of any chopped Nuts, Dried Fruit and Chocolate Chips of your choice
1/3 cup Peanut Butter ~ Smooth or Chunky
1 tsp. Vanilla
6 Tbl. Melted Butter
1/4 cup Honey
DIRECTIONS:
Preheat Oven to 350*
Line a 8×8 pan with foil and spray with cooking spray
Stir dry ingredients together in a large bowl and fold in Nut/Fruits/Chips
Melt the butter in the microwave, add the peanut butter and let sit for a few minute to soften the peanut butter. Add the honey and vanilla. Add all this to the Oats and nut/fruit/chip mixture. I used a wooden spoon and spatula to make sure everything was coated.
Press it firmly into the pan. Bake for 25-35 minutes or until browned on the edges and slightly brown and soft in the middle.
Remove from the pan using the foil and cool on a wire wrack. Cool completely before cutting them.
Cut into whatever size piece you would like. Wrap individually in plastic wrap and freeze in a ziplock bag or container. These make a great quick breakfast on a busy day or to bring along on a hike.
