Gluten Free Raw Granola Bars ~ No Bake Granola Bars

Gluten Free Raw Granola Bars ~ No Bake Granola Bars:

These Granola Bars need to stay refrigerated: Served Cold.

They are really delicious. I keep a bunch Frozen,, when I want a nice Sweet Snack full of Fiber,, I grab one out of the Freezer. They don't take very long to De-frost.

Place in a Food Processor:
1 Cup Unsalted Almonds
1 Cup Bob's Red Mill Gluten Free Quick Cooking Rolled Oats
A pinch of Salt
1/4 Cup Unsalted Sunflower Seeds
1/4 Cup Unsalted Pumpkin Seeds
1/2 Cup Walnuts Or any other nuts of your choice
1/4 Cup Bob's Red Mill Flaxseed Meal
1/4 Cup Coconut
1/8 Cup Sesame Seeds
1/8 Cup Dried Dates
4 -5 Dried Prunes
6 Dried Apricots or any fruits of your choice

Melt in a small sauce pan:
1/2 Cup Honey
1/4 Cup Coconut Oil
1 tsp Vanilla extract
Pour over the dry ingredients
Turn on the Food Processor and mix until well blended
Scrap the sides of the bowl if the dough starts to ride up the edge
If the dough is to stiff add 1-2 TBL Honey and mix again

Line an 9X9 Pan with Parchment Paper and spray with Baking Spray

Spread the dough into the pan. Use a wet spatula to help spread the dough
Cover with Plastic Wrap
Refrigerate until hard 2-3 hours
or if you want to speed it up place in the Freezer until hard. Remove from pan and peel of the parchment paper.
Cut into serving size pieces and wrap individually in Plastic wrap and store in the Freezer in a Ziplock Bag.
I take one out the night before and leave it in the Refrigerator for a quick grab and go Breakfast or snack.
